Cols Bacon Hotpot.

Simple satisfying meal after a stint on the plot!

Ingredients
Pack of bacon
3 potatoes, peeled and slices into 3/16” thick slices
2 onions, peeled and sliced into 3/16” thick rings
4 cloves of garlic, peeled and chopped
2 Knorr chicken stock cubes
Salt
Crushed black pepper
Hot water

Method
Layer potatoes, onion rings and garlic in a casserole dish, finishing with a later of potato.
Lay bacon on top of potatoes, covering them.
Dissolve stock cubes in ½ pint of hot water, add salt and pepper to taste, and add to casserole.
Make liquid level up to ¾ full.
Fit casserole dish lid and put into oven.
Cook at 200ºC for 1 ½ hours or until fully cooked.

Dig in!
